Coating on Exhaust valves

I have an 06 450. I was cleaning up the head and replacing valve stem seals today and was using a wire wheel to clean up the valves (not faces of course) I notice that as I was cleaning the valves it seemed the carbon was coming off almost as if there was a coating that I was taking off. I hope this is not the case but I could use some affirmation that what I did was ok. Thanks

As long as you weren't brushing the faces themselves, you're OK.

Just so we are straight, the face would be the only part of the valve that touches the seats. Right?

The face is the portion of the valve intended to contact the seat, yes.
