How do I change a rim?

I have too many dents in my front rim and it is time to replace it. I have been hitting some large rocks in western MD. Last time I changed a rim was in 1978 on my 10-speed bicycle. Is the operation still, match the two rims up, switch one spoke at a time and then true it?

Perhaps I should start running 15PSI in the front rather than 13.5PSI. I am an A-B rider, weight 240lbs and ride a mixed terrain. Any thougts on proper PSI for large person that hits rocks?
