I've been riding dirt bikes for most of my life and have been wanting a street bike for the past few years. I'm 6'3" 185lb and am looking for a 600cc bike like an r6/crb600/etc. Which manufacturer is best in regards to reliability and comfort level for tall riders?

Just like a dirt bike, you can fit your choice of 600-650cc bike to your particular comfort level with different combinations of;
seat height
lowered pegs
raised bars
The key is to find a bike that fits your needs for either commuting/pleasure touring/weekend track. If your going for commute and there is plenty of stop and go moments....look for a v-twin as the low end torque will give you a more stress free ride. Open winding-twisty roads?...inline four.

im 6'2" and im 240, and just picked up a 05 z1000, and i find its very comfy for my size. just throwing that out there. i drove a 05 zx6r fit ok, but way to hunched over for me, not a fan of the full out crotch rockets.
