Should be sliding foot forward rather than lifting foot off the peg. Downshift right as you are starting to brake, then slide left foot back so balls of that foot are on the back edge of the peg.

I find it hard/impossible to stay on the peg while downshifting when sitting, but thats normal I guess... standing it's a whole other story...

I keep my shifter lever at the same level as my pegs. That way when I want to down shift, all I need to do is slide my foot forward on the peg and tap. To upshift however, I literally hang my boot by the sole on the peg and pull up. Its awkward when doing it standing up, takes some time to get use to, but sitting down it works great.
I find if my shifter is higher, which makes it easier to upshift, then I can't downshift without taking my foot off the peg and tapping it down.
I don't think there is anything wrong with taking your foot off the peg. Its all personal preference and if you can perform all the necessary tasks with the controls whilst riding, then more power to ya!

One thing to be careful of, is when you first run the shifter lower, you need to consciously keep from getting your boot caught between the shifter and the peg. It will be most likely to happen when you're standing and far back on the bike, like hitting a face with the throttle chopped or at the end of a whoops section. It can be really ugly because you can't move and your boot will have insane traction on the peg with the shifter prying down on your toes.
I run mine higher than the peg. If you are way back on the bike braking, you won't need to lift your foot much because your toes are up, and if you're shifting in the air it doesn't matter.
Just my .02 anyway

I always thought it was cool seeing Ricky downshift into a left hander and keep the boot on the shifter as he railed

Not usually, most of the time your foot would pivot on the peg to downshift.

Yes, and also when upshifting from the forward body position.

I lift for downshift, yeah. Where do you think the phrase "kick it down a couple gears" comes from?
