Im putting my 125 on the road to putt around my small town. what gear ratio would be good for this? does it make sense to change both front and back or can I just go up a bunch with the front sprocket  to save money?

Go too big on the front (or too small on the rear) and you'll have to ride the clutch excessively to get it going. Personally (without having done this), the stock gearing ain't so bad for local roads, maybe +1 on the front to save a couple bucks and make the chain last longer.
FWIW, don't bother going too wide on the rear tire, it's gonna get all mashed and 20% of the tire will never be used. This is a 110 on a 1.6 wide rim after a day at the mini-moto track.

As you can see, even at maximum lean much of the tire is unused. 90-100 wide will work just fine and won't look dopey.

I plan to swap this rim to a 2.5" wide as soon as finances allow. However, you could try to find a tire with a greater aspect ratio (instead of 90%, look for 100 or 110) which will do the same thing on the road as a larger front or smaller rear sprocket.

Depends? Is a stock motor with stock gearing? I had a setup that was 16 front 53 rear, and it ran nice and smooth, so I put a 14 up front and really got a nice boost in my acceleration.

Next, I'm going to be running a 16-47 with a big bore installed.

I forgot about this thread, here's the 1.6 vs. 2.9 update I did a month or so ago:

And as you can see, it's being drivin almost to the edge of the tread:
