How many miles per tank are you getting out of your 2012 300 xc when racing? I have to know if I should carry gas for 45 mile loop this Sunday.

You should be ok but --- Some of the '12's have had problems with float level being too high, allowing some overflow and really cutting back on fuel mileage. If you have seen it spitting gas out of the overflow, you should check the float level.
Other than that, you just have to do a measurement -- ie: do a 20-mile loop, measure how much gas it takes to fill it up.

I got my float level at 7mm and jets pretty lean (162 main, 38 pilot, lean needle at #3) for my altitude ~5000ft (from Moab 3500' to the Logan Mountain 8-9'K), and I'm getting about 60 miles a tank at 50:1.

I have the 12-300xcw and rode a 55 mile single track in the hills at about 7,500 feet and only used 1.5 gallons. There was a lot of downhill but just as much uphill.
FYI-Before the ride I filled it completely to the top and went right to the station and filled it up on the way home. 1.5 gallons brought it back to the top.

Just this last weekend I hit reserve at 33 miles and was out at 44. This was so frustrating. I adjusted my float again and now its shutting off asap... I am thinking of ordering a larger tank this week. I have to be able to get 70 out of her or I am going to have to carry tons of gas on me and I hate that... Anyone find anything else that works for them?

Reserve at 33 miles? Something is wrong.
My first thought is the float level is too high, causing gas to spill out the over flow tube. You can lose a lot of gas this way.
Second, I'd make sure jetting is spot on.
But, here's the real answer. If you want to increase your mileage dramatically, and also improve overall performance and ride-ability, get the head shaved. This is such a no-brainer mod and makes such a huge difference, especially if you are riding at altitude. This will also make jetting a lot easier. Guaranteed best $50 you ever spent on a motorcycle in your life.
On my '08 300 XC, I routinely get 40+ mpg trail riding. That's mile per gallon, not miles per tank. That's not at race pace. At race pace, I'd expect a 30% +/- drop. But, this is still way better than 33 miles to reserve, yikes!
