You are right, but for the average rider, it's a non issue. I could probably go 0-60 in 6th gear without cooking the clutch on my bike, although it would cause a lot of unnecessary wear. My car on the other hand (which is relatively torqueless and makes peak power at 8500rpm, same as my bike) would be filled with smoke and rolling backwards down a hill if I tried that.
BTW, if this is an air cooled bike, you are worried about the clutch/heat and wish to extend oil change intervals a little longer than you normally would offroad, installing an oil cooler could be a worthy investment. Not sure how difficult or expensive it would be, but I'm sure it's possible.
