YZ426 Fuel Screw - Stock Settings?

Just curious.
The manual says... Example: 1 3/8
I have always used more like 1 7/8

What is the official stock settings for how many turns out?

There is no official stock setting. That's why there wasn't one listed in the manual. The fuel screw, particularly on the older carbs, needs to be set differently for just about any change in weather or elevation. Carbs newer than '05 were a bit less sensitive about it.
