So I got my new '09 Sunday and haven't been able to do anything with it because I have been sick. Obviously I want to ride it asap which would be this Sat but I won't have time to repack all the bearings.

Since realisticly I probably won't ride it much past the break in period (maybe an hour total) would I be doing any significant harm in waiting to repack the bearings until Sunday, after its maiden "voyage"? I ride at a "dry" track so I am not worried about moisture as much as I am about wear or stress on the bearings which likely don't have much grease on them-so I am told anyway...

That should be fine although it's easier to lube and prep a showroom clean bike. Use antiseize lube on ALL the nuts and bolts.
