Just taken the head and cylinder off to put a big bore on and the inside of the head is black, as was the top of the old piston. How do you go about cleaning all this crud of the inside of the head ?

with out head disassembly?

take some ATF and pour it in the combustion chamber with the head upside down.

let it sit for a day or so.usually the carbon will just scrub off then.

put it in a tray of Mr. Clean for the night and it will all be gone by morning.
I am a heavy duty diesel mechanic(John Deere) and thats what we use for cleaning pistons and it works like a charm

IF the head is coming apart and the seats are going to be cut, I use a 50/50 mix of #8 glass bead & crushed glass in the blast cabinet. I never shoot it at the gasket mating surfaces unless its for a reason. Special attention and prep is required for the guides if they are to be re-used.

I didn't want to pull all the valves out, so it would be assembled.

So I'll just turn the head upside down and put in some ATF.

Live in Thailand, so haven't seen Mr Clean around.
