Essentially, you could possibly improve the mileage, but I wouldn't expect to break 10 mpg.
Remember, you're driving a medium duty truck with an RV body on it that is over 12 foot tall, and 102" wide. This combined with the gearing under most medium duty trucks isn't very favorable to mileage.
Best thing you can do is slow down-wind resistance is your biggest enemy with something this big.

and maybe a BD left side exhaust manifold.
and throw in a shift kit while your at it..
better fuel mileage
and more power :D

Also do the math.
300 miles round trip on an average weekend. (Thats if I stay local) at 6.5 MPG = 46 gallons of fuel at $2.90 = $133 per weekend plus entry, gas, and food your into $200 - $250 every week. Plus add the insurance and RV payment your close to $500 PER WEEK to own and drive this RV to the track.
So if I could save $50 per week at 10mpg I would be tickled.

In the larger trucks, the rule for economy has always been "Gear Fast, Run Slow".
Anything deeper than a 3.55 ratio, and it's too deep for the motor and powertrain you have, most likely.
I'm running 3.30's in my semi, and grossing 80,000 lbs, I can get 6.3 mpg if I keep it under 70. If I run 75, I drop to around 5.8mpg.
Have you ever had the truck in for a checkup with a Duramax tech? Explain to them your concerns, they may be able to help you.

sounds like thier is definatly something wrong. does it seem like your foots in it all the time just to get it "moving"
