I have completely worn out the outside pad on on my rear brakes while the inside pad is barely worn (they are pretty new pads) so I'm assuming that the caliper/piston is sticking.

Any tricks to rebuilding the rear caliper? Is it as simple as disassembly to clean everything and replacing the dust seals?

If the caliper piston were sticking, the brake wouldn't work. There's only one in the rear. What's more likely is that the caliper is not moving freely enough on it's two guide pins, which then doesn't allow the caliper to pull over as easily as it should as the inside pad wears. When you replace your pads, clean the pins thoroughly, but do not lube them. Be sure the bores they pass through are also clean.
