According to my service manual you are to NOT remove the TPS unless you are replacing it. It says if this is removed you will experience performance loss... is this correct???

DO NOT remove it, bad ju-ju. However, you can unplug it to remove its effect, or you can adjust it if the voltage is incorrect, per the manual...SC

I didn't remove it, but was curious as to what would happen if you did...

Very easy...do you have a multimeter? Grab one and your manual and you're set. Read here for more help.
