Can the dual carb setup of a 1987 xr600 be replaced with the single carb setup from a 1991?

Yes you will need the '91 intake manifold and airbox boot.

The heads (twin carb to single carb) are actually very different in that the twin carb models have a twin port right through while the single carb head has a single port that splits into a twin going down to the intake valves. You would need to get an inlet manifold custom made, which could be tricky. To be honest, you're better off persisting with the twin carbs on the XR600, as they actually worked well on these models when dialled in correctly, and didnt have the sticky throttle action of the large single bore carb.
