So I went to get insurance on my bike for theft and to my dismay, they will only cover it for blue book value! this is through progressive. Who does everyone use and how is the policy written? Thanks

WOW, maybe I should go get insurance for my 99 yz 400F. KBB says mine is worth $ 3030.

That is right. Same goes for cars. Just because you have aftermarket parts on it and you value it higher than it actually is, the insurance company's dont. More than likely you couldn't even get KBB out of your bike right now. They will usually cover atleast replacement cost new (MSRP).
