I picked up a 426 motor with the wet sump conversion on it. Can I just swap out the converted oil pump for a stock one to get back to dry sump? Or is there more to it?

Yes, it's real easy. Just go back to the stock oil pump. The whole pump is not required. It's just the steel cover plate between the impeller that must be changed. The Dubach kit had an anodized red plate the stock plate is silver.

Which kit did it have? White Bros made one too. Either way they should be similar. Try to get the instructions like Keith suggested.
