Springs hold the bike and rider up in the suspension stroke.
Spring tension is choosen specifically to get the bike and rider in a specific part of the stroke when standing still (that number being approx 30% of total travel is used at rest).
If the spring is too soft, you start way to far down in the stroke, and you are riding in the bottom valve of the forks, which is there for bottoming, not for wheel traction and control.
Spring weight is extremely important for traction, handling, and control.
