Valve adjustment?

Do I only need new shims for valve adjustment?

Yes if they are out of spec, but depending on how quickly the valves are going out of spec you may need new valves

All new valves or just intake or exhaust

Normally only the intakes move.

My bike will turn off all of a sudden, it splutters when decelerating, hard to start sometimes

checking them is fairly easy and I've seen a couple of youtube videos that walk you through it. just make sure you have some feeler gauges (available at auto parts stores) and I like to put some RTV gasket sealer on the valve cover gasket. (I think the manual calls for it too)... but you may need to reshim... it's a maintenance item.
